Here’s a simple recipe for traditional Hungarian goulash:
Ingredients:
- 500g beef stew meat, cubed
- 2 onions, finely chopped
- 2 cloves of garlic, minced
- 2 tablespoons Hungarian sweet paprika
- 1 teaspoon caraway seeds
- 2 tablespoons tomato paste
- 2 large potatoes, peeled and diced
- 2 carrots, peeled and sliced
- 1 green bell pepper, diced
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- 1 liter beef broth
- Chopped fresh parsley for garnish
Instructions:
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and cook until they become translucent.
- Add the minced garlic, caraway seeds, and sweet paprika. Cook for another minute, stirring constantly to prevent burning.
- Add the beef cubes to the pot and brown them on all sides.
- Stir in the tomato paste and season with salt and pepper.
- Pour in the beef broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the meat is tender.
- Add the diced potatoes, sliced carrots, and diced green bell pepper. Continue simmering for an additional 20-30 minutes, or until the vegetables are cooked through.
- Adjust the seasoning if needed.
