Here’s a simple recipe for traditional Hungarian goulash:

Ingredients:

  • 500g beef stew meat, cubed
  • 2 onions, finely chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons Hungarian sweet paprika
  • 1 teaspoon caraway seeds
  • 2 tablespoons tomato paste
  • 2 large potatoes, peeled and diced
  • 2 carrots, peeled and sliced
  • 1 green bell pepper, diced
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 1 liter beef broth
  • Chopped fresh parsley for garnish

Instructions:

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and cook until they become translucent.
  2. Add the minced garlic, caraway seeds, and sweet paprika. Cook for another minute, stirring constantly to prevent burning.
  3. Add the beef cubes to the pot and brown them on all sides.
  4. Stir in the tomato paste and season with salt and pepper.
  5. Pour in the beef broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the meat is tender.
  6. Add the diced potatoes, sliced carrots, and diced green bell pepper. Continue simmering for an additional 20-30 minutes, or until the vegetables are cooked through.
  7. Adjust the seasoning if needed.
  8. Serve the goulash hot, garnished with chopped fresh parsley.
